Cooking Time: 35–40 min
Cooling Time: Until completely cool
Servings: 1 mini cake
πΈ INGREDIENTS
π For the Cake
• 1 box funfetti cake mix
• 3 eggs
• 1 cup water
• 1/2 cup oil
π¦ For the Decoration
• Funfetti vanilla frosting
• Rainbow nonpareil sprinkles
π© π³ METHOD
1. Prepare the Cake Batter
Preheat your oven to 350°F / 175°C.
In a large mixing bowl, combine the funfetti cake mix, eggs, water, and oil.
Mix until everything is well combined and the batter is smooth.
2. Bake the Cake
Pour the batter into a greased square baking pan and spread it evenly.
Bake for 35–40 minutes, covering the pan loosely with aluminium foil halfway through if needed to prevent the top from browning too much.
Check that the cake is fully baked by inserting a toothpick into the centre. It should come out clean.
Allow the cake to cool completely before assembling.
3. Create Your Mini Cake
Lightly grease a small ramekin.
Press it into the cooled cake and twist gently to cut out a mini cake. Carefully remove the cake and slice it horizontally through the centre to create two layers.
4. Add the Frosting
Place the bottom cake layer back into the ramekin.
Spread a generous layer of funfetti vanilla frosting over the top.
Add the second cake layer, then spread another layer of frosting evenly over the top, reaching all the way to the edges.
5. Add the Rainbow Sprinkles
Cover the frosting generously with rainbow nonpareil sprinkles.
Place the mini cake in the fridge to chill until the frosting firms up slightly.
Take a Bite & Enjoy!
Once the frosting has set a little, take your first bite and enjoy your adorable, colorful mini funfetti cake! πππ
✨ MY LITTLE TIP
Make sure the cake is completely cool before cutting and assembling it. Otherwise, the frosting may melt and the little cake layers could fall apart.
Fluffy cake, creamy frosting, and rainbow sprinkles in every bite — a mini dessert that feels like a party! ππ
